Guest guest Posted January 15, 2002 Report Share Posted January 15, 2002 * Exported from MasterCook * Quick Apple-Butter Rutabagas Recipe By :Kathleen Mays and Sandra Gottfried Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups rutabagas -- (about 1 lb) peeled and chopped 1 large apple -- such as a Delicious, peeled and chopped 2 tablespoons butter or margarine 1/3 cup brown sugar 1/4 teaspoon ground allspice 1/4 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1/4 cup chopped pecans or walnuts 1. Microwave rutabagas in a glass dish with 1/4 cup water, on HIGH for about 12 to 15 minutes till tender. Drain. 2. Microwave apple and butter on HIGH for about 2 minutes. 3. Add all ingredients to rutabagas, stirring well until sugar melts. 4. Mix in chopped nuts, and serve. Makes 4 servings. Each serving contains about: 222 calories, 2g protein, 32g carbohydrate, 3 g fiber, 11 g fat, 15mg cholesterol, 85mg sodium.
