Quick Apple-Butter Rutabagas

Amount Measure Ingredient -- Preparation Method

3 cups rutabagas -- (about 1 lb) peeled and chopped

1 large apple -- such as a Delicious, peeled and chopped

2 tablespoons butter or margarine

1/3 cup brown sugar

1/4 teaspoon ground allspice

1/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 cup chopped pecans or walnuts

 

1. Microwave rutabagas in a glass dish with 1/4 cup water, on HIGH for about 12

to 15 minutes till tender. Drain. 2. Microwave apple and butter on HIGH for

about 2 minutes. 3. Add all ingredients to rutabagas, stirring well until sugar

melts. 4. Mix in chopped nuts, and serve.

 

Makes 4 servings.

 

Each serving contains about: 222 calories, 2g protein, 32g carbohydrate, 3 g

fiber, 11 g fat, 15mg cholesterol, 85mg sodium.

NOTES : Select small rutabagas for their sweeter taste. Served as a sweet side

dish, the flavor is similar to a spicy baked apple, with the nuts giving a

crunchy texture.
