Potato Garlic Sauce

1 cup mashed cooked white potatoes

4 medium garlic cloves

1/2 cup commercial mayonnaise

1/2 cup chopped pine nuts or walnuts

1/4 cup water

1 teaspoon rice vinegar

 

1. Put all ingredients in food processor and blend until smooth.

 

2. For a hot sauce, pour into a small pan and place over low heat until heated

through.

 

3. For a cold dipping sauce, cover and chill in the refrigerator for several

hours or overnight.

 

Makes 2 cups, about 6 servings.

 

Each serving contains about: 226 calories, 2g protein, 9g carbohydrate,

 

1 g fiber, 21 g fat, 11 mg cholesterol, 212mg sodium.

NOTES : This versatile sauce can be served either hot or cold. When hot, it's

great on fresh steamed vegetables; served chilled, it makes a creamy dip for

crisp cold sticks of celery, carrots, jicama and cauliflowerets.
