Guest guest Posted January 15, 2002 Report Share Posted January 15, 2002 * Exported from MasterCook * Black Bean Chili with Shiitake Recipe By :Jennifer Snyder Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound dry black beans 3 bay leaves 1 medium onion -- quartered 6 cups water 2 tablespoons olive oil 3 medium onions -- chopped 2 medium green peppers -- chopped 1 pound fresh or reconstituted shiitake (2 2/3 cups) -- stems removed, chopped 6 cloves garlic -- mashed 3 tablespoons cumin 3 jalapeno chile peppers -- chopped 1 teaspoon salt 1 tablespoon paprika 2 teaspoons oregano 1/2 teaspoon ground cloves 3 tablespoons tomato paste juice of 1 lemon 1 tablespoon honey 1 cup sour cream or soy sour cream -- optional In a 6-quart pressure cooker, cook black beans, bay leaves, quartered onion, and water under 15 pounds pressure for 25 minutes or in an open kettle for 1 1/2 hours. Drain liquid to 1/2 inch above the beans. Set aside. Heat the oil in a large skillet, and saute onions over medium heat for about 5 minutes. Add green peppers and shiitake. Cover and cook for 15 minutes, stirring frequently. Add garlic, cumin, jalapeno, salt, paprika, oregano, and ground cloves. Cook, stirring constantly, for 1 minute. Add this to the black beans along with the tomato paste, lemon juice, and honey. Cook on low for 30 minutes, increasing the time if you want a deeper flavor. Adjust seasoning to taste.
