Guest guest Posted January 14, 2002 Report Share Posted January 14, 2002 * Exported from MasterCook * Holiday Pie Recipe By :Kathleen Mayes and Sandra Gottfried Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- pastry for a 9-inch pie shell -- recipe in diirections 2 medium sweet potatoes 2 large eggs 2/3 cup granulated sugar 1 teaspoon salt 1 teaspoon ground cinnamon 1 teaspoon vanilla extract 1/2 teaspoon ground cloves 1/4 teaspoon ground mace 1/4 teaspoon ground ginger 1 can evaporated milk -- (5 oz) and sufficient fresh milk to makw 1 cup total 2 tablespoons brandy -- (or 1 teaspoon brandy extract) whipped cream for topping -- optional 1. Make pastry. 2. Boil sweet potatoes until tender, remove skin. Should be about 1 1/2 cups. 3. In food processor blend potatoes with eggs, sugar, and spices. Mix in milk and brandy. Pour into unbaked pastry shell. 4. Bake at 350 degrees F for 40 to 50 minutes, until toothpick inserted in center of pie comes out clean. Serve warm with whipped cream, if desired. Pastry (single crust for one 9-inch pie) 1/2 cup (1 stick) margarine 1 teaspoon granulated sugar 1/8 teaspoon salt 1 1/4 cups unbleached all-purpose or pastry flour 2 tablespoons ice water Mix all ingredients. Chill in freezer for about 1/2 hour. Roll out and trim to fit 9-inch pie pan, giving edges a decorative finish with fingertips. Makes one 9-inch pie, about 8 servings. Each serving (without cream) contains about: 337 calories, 6g protein, 45g carbohydrate, 2g fiber, 15g fat, 60mg cholesterol, 499mg sodium.
