Guest guest Posted January 14, 2002 Report Share Posted January 14, 2002 * Exported from MasterCook * Moroccan Tagine with Savory Saffron Couscous Recipe By :Arthritis Cure Cookbook by Adderly and De Angelis Serving Size : 4 Preparation Time :0:00 Categories : Soups And Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup lentils -- rinsed 3 cups vegetable stock or water 2 garlic cloves -- peeled 1 carrot -- trimmed, quartered 1 yam -- scrubbed, quartered 1 yellow onion -- peeled, quartered or 8 pearl onions -- peeled, quartered 1/4 cup fresh lemon juice 1/2 teaspoon ground ginger 1/2 teaspoon ground coriander 1/2 teaspoon ground cinnamon 1/2 teaspoon ground pepper 1 bunch fresh cilantro -- thick stems removed 1 teaspoon salt savory couscous (see recipe) -- for accompaniment In a large pot, combine the lentils and stock. Bring to a boil, covered, lower heat, and simmer for 35 minutes. In a blender or food processor, pulse chop the garlic, carrot, yam and onion (do not chop pearl onions). Add vegetables to the lentils with lemon juice and spices. cook covered until the beans are soft, about 30 minutes. Pulse chop the coriander (cilantro). Stir in half the cilantro and tall the salt. Cook another 1 to 2 minutes. Spoon over the prepared couscous and garnish with remaining cilantro.
