Guest guest Posted January 14, 2002 Report Share Posted January 14, 2002 * Exported from MasterCook * Sweet Potato-Apple Dessert Recipe By :Kathleen Mays and Sandra Gottfried Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups cooked sweet potatoes -- peeled and cut in chunks 1 tablespoon brown sugar 1 tablespoon mild honey 3 tablespoons melted butter or margarine -- divided 2 large eggs -- separated 3 red apples -- peeled, cored and cut into 12 circular slices 1. In a food processor puree sweet potatoes, brown sugar, honey, 2 tablespoons of butter and egg yolks. 2. In a separate bowl whisk egg whites until stiff and peaks are formed. Fold into sweet-potato mixture. 3. Butter 6 custard cups, and place a slice of apple in the bottom of each cup. Divide mixture equally to fill cups, and place a slice of apple on top of mixture in each cup. Brush apple slices with remaining melted butter. 4. Place cups in a pan filled half-way up the sides with hot water. 5. Bake at 350 degrees F for 30 minutes. 6. Let cool 10 minutes, then run a knife around the sides of each cup. Invert on a plate and serve warm. Makes 6 servings. Each serving contains about: 210 calories, 3g protein, 33g carbohydrate, 3g fiber, 8g fat, 86mg cholesterol, 90mg sodium.
