I love rutabagas, but they're a pain to prepare. Here's a recipe I found

intriguing.

Savory Rutabaga Cake

4 cups grated rutabagas

2 cups grated potatoes

1/2 cup grated onion

1 garlic clove -- minced

4 tablespoons olive oil -- divided

1 teaspoon seasoned salt

 

1. Toss together rutabagas, potatoes, onion and garlic.

 

2. Heat 2 tablespoons of the oil in a cast-iron skillet or heavy nonstick frying

pan. Spoon in the vegetable mixture, flattening it evenly in the pan. Sprinkle

with seasoned salt.

 

3. Turn down the heat, cover and cook till bottom is nicely brown, about 10 to

15 minutes.

 

4. To turn the cake, slip it out of the pan onto a plate. Place another plate on

top of the cake and invert it.

 

5. Add remaining oil to pan, and return cake to cook and brown the second side.

 

6. Slice into wedges and serve hot.

 

Makes 6 servings.
