Guest guest Posted January 13, 2002 Report Share Posted January 13, 2002 * Exported from MasterCook * Sour Cream and Caramelized Onion Muffins Recipe By :Miracle Muffins by Patty Neeley Serving Size : 14 Preparation Time :0:00 Categories : Muffins Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- ONIONS: 1 medium onion -- any variety 1 tablespoon extra virgin olive oil 1 pinch each salt and black pepper MUFFINS: 2 1/2 cups all-purpose flour 1 1/2 teaspoons salt 1/4 teaspoon fresh ground pepper 1 tablespoon baking powder 1 teaspoon baking soda 1/2 cup lowfat buttermilk 3/4 cup 2% reduced-fat milk 1/2 cup lowfat sour cream 1 large whole egg -- plus 2 egg whites 2 tablespoons extra virgin olive oil 1/2 teaspoon minced garlic Peel the onion, cut in half and slice it thin. Put first measure of olive oil in a medium saute pan over high heat. When hot, add onions, tossing well. Sprinkle with salt and pepper and continue to cook the onions, stirring them often as they brown; turn heat to a lower setting if needed. Continue to cook the onions until they are caramelized to a golden brown, approximately 15 to 20 minutes. Set aside to cool. When cool, chop them in a food processor and set aside. PREHEAT OVEN to 375F. Line a muffin pan with paper muffin cups and lightly coat them with a cooking spray. In a large mixing bowl, combine flour, salt pepper, baking powder and baking soda. In a separate mixing bowl combine all remaining ingredients including the chopped onions. Whisk together until smooth. Pour the wet into the dry ingredients and mix just until all ingredients are moist. Spoon batter into prepared muffin cups, filling to the rims and bake for approximately 20 minutes in the preheated 375F oven. Muffins should be light golden brown and a cake tester inserted into the center should come out clean. Cool muffins in pan for 10 minutes before removing to cool completely. Store in an airtight container. VARIATION - These muffins are also delicious when you add 1/3 cup finely crumbled Gorgonzola cheese to the web ingredients before mixing.
