Preserving Egg Plant/Aubergine/Brinjal

Hi all!

 

My vegetable garden is about to yield a bumper crop of egg plant. There is

no way our family will be able to eat them as fast as they ripen so I'll

need to find ways to frieze and preserve them. I would appreciate any true

and tried recipes that would help me do this. I'm also looking for a

marinated egg plant recipe - Mediterranean style. I once tasted a delicious

version of this at a restaurant. It was served with home made bread and

salad. Hmmmmmm!

Check the messages section at .groups for past recipes posted to this

group. Over 100 recipes with eggplant have been posted since early August.

This is not tried and true. But I know that the author does test her recipes

before she publishes.

Marinated Eggplant

Amount Measure Ingredient -- Preparation Method

2 pounds eggplant -- (about 3 medium)

preferably the long thin Japanese ones

salt

3 cloves garlic -- (3-4)

5 tablespoons red wine vinegar

1 tablespoon olive oil

1/2 cup fresh basil -- coarsely chopped

salt and pepper

 

Slice the eggplant about 1/4 inch thick and place in a colander. Sprinkle with

salt and let sit 30 minutes. Rinse and pat dry.

 

Steam the eggplant in a steaming apparatus for 20 minutes, or until tender. It

will not necessarily be translucent, as it is when sauteed. Remove from the

heat.

 

Mix together the garlic, vinegar, and olive oil. Toss the eggplant slices with

the garlic mixture and layer in a serving dish, topping each layer with basil,

salt if necessary, and freshly ground pepper, to taste. Refrigerate until

shortly before serving.

 

This will keep for several days in the refrigerator. Serve as a first course

over lettuce leaves, with tomatoes, on the side, or add to salads.

Sodium. Exchanges: 1 1/2 Vegetable; 1/2 Fat; 0 Other Carbohydrates.

 

NOTES : Steaming eggplant makes it tender and very absorbent, a perfect

consistency for the pungent marinade. In a traditional Italian recipe the

eggplant would probably be fried. This tangy version is very light in

comparison.
