Un-L.A Chickpea Salad

Amount Measure Ingredient -- Preparation Method

4 cups cooked or canned chickpeas

1 small red onion -- diced

4 cloves garlic -- minced

3 poblano chiles, roasted, seeded -- and diced

2 serrano chiles -- minced

10 scallions, green and white parts cut into -- thin

rounds

1/3 cup red wine vinegar

2/3 cup extra virgin olive oil

Juice of 1 lemon

1 teaspoon ground cumin

1 teaspoon kosher salt

Black pepper in a mill

1 teaspoon cumin seeds, toasted

 

In a large bowl, toss together the chickpeas, onion, garlic, chiles, and

scallions. In a small bowl, mix together the vinegar, olive oil, lemon

juice, cumin, salt and pepper. Pour the dressing over the vegetables, toss

thoroughly, taste, and correct the seasoning. Scatter the cumin seeds over,

and let the salad rest at room temperature for at least 15 minutes before

serving.
