Guest guest Posted January 12, 2002 Report Share Posted January 12, 2002 * Exported from MasterCook * Un-L.A Chickpea Salad Recipe By : California Home Cooking by Michele Anna Jordan Serving Size : 6 Preparation Time :0:00 Categories : Beans Salads Sda-Veg-Recipes2 (AT) Egroups (DOT) Com Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups cooked or canned chickpeas 1 small red onion -- diced 4 cloves garlic -- minced 3 poblano chiles, roasted, seeded -- and diced 2 serrano chiles -- minced 10 scallions, green and white parts cut into -- thin rounds 1/3 cup red wine vinegar 2/3 cup extra virgin olive oil Juice of 1 lemon 1 teaspoon ground cumin 1 teaspoon kosher salt Black pepper in a mill 1 teaspoon cumin seeds, toasted In a large bowl, toss together the chickpeas, onion, garlic, chiles, and scallions. In a small bowl, mix together the vinegar, olive oil, lemon juice, cumin, salt and pepper. Pour the dressing over the vegetables, toss thoroughly, taste, and correct the seasoning.
