Tofu Stew with Shiitake

 

Recipe By :Gradual Vegetarian by Lisa Tracy

Amount Measure Ingredient -- Preparation Method

1 shiitake mushroom -- (Dried)

2 small onion -- cut in half-moons

1 carrot -- thinly sliced

6 fresh mushrooms -- sliced

1 celery rib -- sliced

1 pound tofu -- cut into chunks

kudzu or cornstarch

tamari soy sauce

 

Boil the shiitake mushroom 5 to 7 minutes in 1 quart water. Add onions and boil

5 minutes. Add carrots, mushrooms, celery and tofu. Dissolve a little kudzu in

cold water and add to stew to thicken. Season with tamari. Slice shiitake

mushroom and return to stew.

 

[Editor comment: I assume that the recipe calls for dry shiitake -- since that

is all that was available in the USA back when this book was written.)
