Guest guest Posted January 11, 2002 Report Share Posted January 11, 2002 * Exported from MasterCook * Holiday Lentil Loaf Recipe By :Karen Alexander, M.A. Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 small onion -- finely chopped 1 clove garlic -- crushed 2 stalks celery -- finely chopped 2 teaspoons sage 3 cups cooked lentils 3 cups cooked wild rice 1/2 cup chopped walnuts 1/4 cup whole wheat bread crumbs 2 tablespoons vinegar 1 tablespoon Ener-G egg replacer + 4 tablespoons water 2 tablespoons whole wheat flour Preheat oven to 350F. Heat a little water in a skillet over medium high heat. Saute the onion, garlic, and celery until the onion is just tender. Add the sage. In a large bowl, combine the skillet mixture, lentils, wild rice, walnuts, breadcrumbs, vinegar, and whole wheat flour. Mix very well. In a separate bowl, beat together the Ener-G egg replacer and the water. Add to the mixture in the large bowl. Lightly coat a loaf pan with cooking spray, and fill it with the mixture. Press down. Bake 30 minutes covered, uncover and bake 10 minutes more. Let stand for 10 minutes before serving.
