Guest guest Posted January 11, 2002 Report Share Posted January 11, 2002 * Exported from MasterCook * Eggplant Chili Recipe By :Karen Alexander, M.A. Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 onion -- diced 1 green bell pepper -- seeded and diced 2 cups peeld diced eggplant 2 cloves garlic -- minced 30 ounces cooked kidney beans -- if canned, rinse and drain 1 15 oz can stewed tomatoes 1 15 oz can crushed tomatoes 2 tablespoons dried parsley 2 teaspoons chili powder 1 tablespoon oregano 1 teaspoon thyme 1/2 teaspoon salt 1/2 teaspoon pepper 4 large green onions -- chopped Heat a little water in a soup pot over medium high heat. Add the onion, bell pepper, eggplant, and garlic. Cook until vegetables are tender--about 10 minutes. Stir in the beans, stewed tomatoes, crushed tomatoes, parsley, chili powder, oregano, thyme, salt, and pepper. Cook over low heat, stirring frequently, about 30 minutes. Remove from heat and let stand 5 minutes. Top with green onions and serve. In the notes listed at the end of the recipe, was a comment about avoiding eggplant if you suffer from joint pain. I have never heard this before. Does anyone know why? Carrie, I have also heard that people with arthritis should avoid the " nightshade " family of vegetables since they can apparently aggravate the condition, but I'm not sure of the actual reason this is so. I believe that besides eggplant, tomatoes and potatoes also come from this family. I have arthritis and happen to love all those vegetables. In my case, they really don't seem to bother me, at least not that I've noticed. There are probably other vegetables that are in this group but I can't think of them offhand.
