Guest guest Posted January 11, 2002 Report Share Posted January 11, 2002 * Exported from MasterCook * Outpost Natural Foods ~ Tomato Dill Soup Recipe By :Outpost Natural Foods, Milwaukee, WI Serving Size : 8 Preparation Time :0:00 Categories : Restaurants Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 cups thinly sliced leeks -- well rinsed 2 tablespoons extra-virgin olive oil 1 tablespoon vegetarian chicken-flavored broth powder 3 1/2 cups hot water 16 cups diced canned tomatoes -- undrained 1 1/2 cups tomato juice 3 tablespoons finely chopped fresh dill 1 Pinch cayenne pepper Salt and pepper to taste In large soup pot, saute leeks in oil. In large bowl, whisk together broth powder and water. Add to pot along with tomatoes, tomato juice, dill and cayenne. Bring to boil, then reduce heat and simmer uncovered 30 minutes. Remove from heat and add salt and pepper.
