Pizza with Sweet Onion, Red Pepper, Ricotta and Basil

1/2 Pizza Dough recipe -- (see recipe)

1 cup tomato sauce for pasta -- to 1 1/2

- or a 14-ounce can tomatoes -- drained and chopped

2 garlic cloves -- minced or pressed

salt to taste

1 sweet red onion -- sliced in rings

- and soaked in water for 15 to 30 minutes -- optional

1 red pepper -- thinly sliced in

strips or rings

3 tablespoons part-skim ricotta -- to 1/2 cup

1 tablespoon olive oil -- to 2

a generous handful of fresh basil -- slivered

or torn in

pieces

 

 

1 12-14-inch pizza, serving 2 to 4

 

This beautiful pizza tastes richer than it is. The onion adds a sweet

dimension.

 

1. Preheat the oven to 450 degrees F for at least 30 minutes, with a

baking stone or tiles in it. Soak the onion in a bowl of cold water

to cover for 15 to 30 minutes.

 

2. If using canned tomatoes, stir in the garlic and add salt to

taste. Spread the tomato sauce over the crust. Drain the onion, pat

dry and spread over the tomato sauce. Distribute the red pepper

slices over the onions. Dollop on the ricotta by the heaped

teaspoons. Drizzle on the olive oil.

 

3. Gently slide the pizza from the pizza from the peel onto the hot

baking stone, or place the pizza pan on top of the baking stone. Bake

20 to 25 minutes, until the edges of the onions and red peppers are

just beginning to brown and the cheese has softened.

 

4. Remove from the oven, sprinkle the basil over the pizza, and serve.

 

Advance preparation: The crust will keep for months in the freezer

and for a day in the refrigerator after rolling out. The tomato sauce

will keep for 3 to 5 days in the refrigerator and for several months

in the freezer. The pizza can be made through step 3, reheated for 5

to 10 minutes in a 400F oven, garnished with the basil and served.
