Sweet and Spicy Coriander Sauce; Prune, Cilantro, Tahini and Lime

Amount Measure Ingredient -- Preparation Method

6 pitted prunes

3 cups water

1 cup fresh cilantro -- tightly packed

1/2 cup chopped fresh parsley

1/4 cup fresh lime juice

1 cloves garlic -- peeled

1/2 teaspoon chopped fresh ginger

1/4 teaspoon sea salt

1/4 teaspoon freshly ground pepper

1/4 cup sesame tahini

2 tablespoons olive oil -- may double

or safflower oil

 

1. Place the prunes in a saucepan and cover with water. Bring to a simmer and

simmer 15 minutes. Drain and retain the cooking liquid.

 

2. Combine all the ingredients except the oil and prune water in a blender or

food processor fitted with the steel blade and blend together until you have a

paste. Without stopping the blender or food processor, blend in the oil and

enough of the prune water to give it the consistency you desire for the planned

use.

 

3. Store the sauce in a covered jar in the refrigerator. It will keep for

several days.

 

TIP - Consistency will depend on whether you wish to use the sauce as a dip,

spread or sauce. The amount of oil or prune water you add will also depend on

the consistency of your tahini. If it is very runny, you will need less oil, but

if it is thick like peanut butter, you will need more liquid.
