Quick and Easy Lentil Soup

Amount Measure Ingredient -- Preparation Method

4 cups vegetable broth

2 garlic cloves -- minced

1 cup water

1 16 oz can chopped tomatoes

1/4 cup dry red wine

1 bay leaf

1 cup lentils

1/2 teaspoon basil -- 1/2 to 1 teaspoon

1 carrot -- sliced

1/2 teaspoon thyme -- 1/2 to 1 teaspoon

1 onion -- chopped

1/4 teaspoon fennel seed

1 celery stalk -- sliced

 

Combine all the ingredients in a large saucepan and bring to a boil.

 

Reduce heat and cook covered for 20-25 minutes.
