Greek Style Spinach Salad

Amount Measure Ingredient -- Preparation Method

350 grams fresh spinach

2 thin slices mild onion -- halved and separated into half moons

1/2 small bulb fennel -- cut in thin slivers (optional)

1 cucumber -- halved and cut in thin slices

2 medium tomatoes -- cut into eighths

2 tablespoons lemon juice

salt and freshly ground pepper

2 tablespoons extra virgin olive oil -- (2 to 3)

8 good quality Greek-style black olives -- pitted if

desired (optional) (8 to 12)

feta cheese (optional)

 

Remove the spinach stems and any wilted leaves and wash remaining leaves

thoroughly. Dry the spinach well in a salad spinner or towel. Tear any large

leaves in two or three pieces.

 

In a large bowl combine spinach, onion, fennel and cucumber. Toss to combine.

Add olive oil, lemon juice, salt and pepper and toss. Taste and adjust

seasoning.

 

Spoon the salad onto a platter or shallow serving dish. Arrange the tomato

wedges around the edge of the salad. Garnish with olives.

NOTES : " This salad makes an attractive first course or accompaniment. In Greece

it often has feta cheese as well but you would not include the cheese if you

were serving it with lamb moussaka for a kosher meal. For other occasions,

scatter 1/2 cup crumbled feta cheese over the salad just before serving. " -
