Wheat Berries

1 cup wheat berries

1/2 teaspoon salt -- or to taste

 

Wheat berries are the whole wheat kernels that flour is milled from. The

grains are hearty and chewy and benefit from soaking before cooking. I

think they lend themselves best to salads and soups. MAKES ABOUT 4 CUPS, 6

SERVINGS

 

1. Soak the wheat berries in water to cover by an inch for several hours

or overnight if possible, and drain.

 

2. Combine the wheat berries and 3 cups water and bring to a boil. Reduce

the heat, cover, and simmer for 1 hour. Add salt and continue to simmer

for another 30 to 60 minutes, until the grains are tender. They will still

be chewy. Drain off any water remaining in the pot.

 

Advance preparation: Wheat berries will keep for about 5 days in the

refrigerator, and for 3 to 4 months in the freezer. To reheat in the oven,

place in a lightly oiled baking dish, cover tightly with foil, and reheat

in a 350F oven for 20 minutes. To reheat in a microwave, place in a

microwave-safe bowl, cover tightly with plastic wrap, then pierce the

plastic with a knife. Microwave for 1 minute. Let sit for 1 minute,

carefully remove plastic, and fluff with a fork. Repeat one more time, if

needed.
