Southwestern Baked Beans

1 cup chopped onion

1/2 cup chopped green bell pepper

1 jalapeno chili -- chopped

2 cloves garlic -- chopped

1 tablespoon olive oil

2 15-ounce cans pinto or black beans

1/2 cup water

1/4 cups sliced softened sun-dried tomatoes

1/4 cup packed light brown sugar

1 teaspoon ground cumin

1/2 teaspoon dried thyme leaves

1 bay leaf

1/2 teaspoon salt

 

Saute onion, chilies and garlic in oil in large skillet until tender, about 8

minutes

 

Combine onion mixture and remaining ingredients in 1-1/2 quart casserole, and

bake at 350 degrees F, covered, for 30 minutes.

 

Uncover and bake an additional 15 to 20 minutes, until liquid is nearly

absorbed.
