Guest guest Posted January 6, 2002 Report Share Posted January 6, 2002 * Exported from MasterCook * White Beans with Sun-Dried Tomatoes Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup sun-dried tomatoes (not oil packed) -- (1-1/2) 1 tablespoon olive oil 1 large yellow onion -- diced 3 cloves garlic -- minced (3-4) 3 15 oz cans cannellini beans (or other white beans) -- rinsed and drained 1/4 cup water 1/2 teaspoon ground sage 1/2 teaspoon salt 1/3 cup fresh basil -- chopped In small bowl, soak tomatoes in enough warm water to cover, until tomatoes are soft (about one hour). Drain and coarsely chop. In saucepan, heat oil over medium high heat. Add onion and garlic, cook, stirring, until onion is soft and translucent. Add beans, tomatoes, water, sage, salt. Cook for 10 to 15 minutes. Stir in basil, remove from heat.
