Italian Sausage Soup

1/2 package sausage flavor vegetarian meat analog

gimmelean -- yves, light life) (1/2-1)

4 small zucchini -- (4-5)

16 ounces vegetable broth

30 ounces tomato sauce

15 ounces canned italian tomatoes

15 ounces canned mushrooms

1 teaspoon oregano leaves

1 tablespoon basil

4 small crushed cloves garlic

2 medium onions

 

Brown sausage according to package directions, breaking it up into hamburger

like pieces. Saute with onion and garlic. Once sausage is browned, add all other

ingredients.

 

Bring to a boil, then simmer for about 20 minutes, until zucchini is done and

tender.
