This removes many of the cells containing volatile juices that stay with you long after you've eaten your meal. Either place the cut-up onions in a bowl of cold water with a tablespoon of vinegar, if you wish, then drain, or place in a strainer and rinse thoroughly, or both. The longer you soak the onion, the milder it will be.
