If you are not cooking an onion, once it has been chopped or sliced, you

should rinse it with cold water. This removes many of the cells

containing volatile juices that stay with you long after you've eaten

your meal. Either place the cut-up onions in a bowl of cold water with a

tablespoon of vinegar, if you wish, then drain, or place in a strainer

and rinse thoroughly, or both. The longer you soak the onion, the milder

it will be.
