Adding salt helps to break down the garlic. In the bowl of a mortar and pestle, combine 1/4 teaspoon salt with the number of garlic cloves called for in the recipe. Pound the mixture to a paste. Pounded garlic is quite pungent. Another way to puree garlic, without getting quite as pungent a mixture, is to set the clove of garlic on a cutting board, with 1/4 teaspoon of salt next to it. Take a small sharp knife, or even a butter knife, and scrape the edge of the blade down the side of the garlic clove, picking up a little salt with the knife and mixing the scraped garlic with it as you work. Continue scraping the clove until only a bit of the clove is left, then mash what is left with the remaining salt.
