Gremolata

Amount Measure Ingredient -- Preparation Method

2 cloves garlic (1 - 2)

1/4 cup fresh parsley (flat-leaf) -- chopped

2 teaspoons lemon zest (finely chopped or grated)

 

Toss together the garlic, parsley, and lemon zest. Add to dishes shortly

before serving, following specific recipe instructions (e.g. Pasta with

Asparagus and Gremolata or Pan-Cooked Mushrooms with Gremolata).

 

Advance preparation: This shouldn't be made more than an hour or two

ahead because the garlic will become very pungent.

 

Makes about 1/4 cup.

NOTES : Gremolata is a mixture of chopped parsley, garlic, and grated

lemon zest. It makes a great seasoning for pastas and roasted, steamed,

and grilled vegetables, for salads, Mediterranean-style bean dishes,

grains, and pan-cooked mushrooms.
