Guest guest Posted January 6, 2002 Report Share Posted January 6, 2002 * Exported from MasterCook Mac * Tomato Vinaigrette Recipe By : Martha Rose Shulman, The Best Vegetarian Recipes Serving Size : 1 Preparation Time :0:00 Categories : 2 Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound ripe tomatoes (peeled, seeded -- finely chopped -- or crushed in a food processor 1 clove garlic -- minced 1 tablespoon balsamic vinegar 2 tablespoons red wine vinegar (or sherry vinegar) salt and freshly ground black pepper -- to taste 2 tablespoons extra virgin olive oil 2 tablespoons fresh basil -- chopped Stir together all the ingredients. Let sit for 10 to 15 minutes before using. Makes about 3/4 cup.
