Asian Dressing

Amount Measure Ingredient -- Preparation Method

1 tablespoon fresh lime juice

1 tablespoon rice wine vinegar (or balsamic vinegar)

1 small garlic clove -- minced or pressed

2 teaspoons fresh ginger (1 - 2) -- finely minced

1 tablespoon soy sauce (tamari or Kikkoman)

1/2 teaspoon Asian hot chile oil (or a pinch of cayenne --

optional

1 tablespoon sesame oil (Asian)

4 tablespoons low-fat buttermilk (4 - 5)

-- or plain nonfat yogurt

salt and freshly ground black pepper -- to taste

 

Stir together the lime juice, vinegar, garlic, ginger, soy sauce, and

chile oil. Whisk in the sesame oil and buttermilk. Thin with water, if

desired, and add salt and pepper to taste.

 

Makes 1/2 cup.
