Whisk in the olive oil. • Low-fat Lime Balsamic Vinaigrette • Replace the 5 tablespoons olive oil with 1 tablespoon olive oil and 1/4 cup low-fat buttermilk or plain nonfat yogurt. Add 1 tablespoon water, if using yogurt. Makes about 1/3 cup.
