Garlic will also become more pungent, though this is less obvious in a sharp vinegar-based, mustardy vinaigrette. As a rule of thumb, I try not to make lemon juice-based dressings more than a couple of hours ahead of serving. Vinegar-based dressings will keep for a week in the refrigerator, though the garlic becomes more pungent. See Vinaigrette for the Week for a solution to this problem.
