Guest guest Posted January 6, 2002 Report Share Posted January 6, 2002 Black Soy Bean Hummus, The Cooking Cardiologist * Exported from MasterCook * Black Soy Bean Hummus Recipe By :The Cooking Cardiologist, Richard Collins, page 24 Serving Size : 4 Preparation Time :0:00 Categories : Appetizers And Snacks Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 clove garlic, plus 1 teaspoon powdered garlic -- minced 1 can (15 ounce) EDENSOY Organic Black Soy Beans -- drained 1 small yellow onion 2 tablespoons lemon juice 1 1/2 tablespoons soy sauce, low sodium 1 teaspoon balsamic vinegar 2 teaspoons Cajun seasoning 3 green onions -- chopped Pierce top of unpeeled onion with fork in 2-3 places. Place in a small microwave dish. Microwave on high 2-3 minutes. Remove from microwave, peel and chop. Place the onion with all the remaining ingredients in a food processor, process until smooth. Before serving fold in green onions or use as a garnish. Serve with fat-free chips.
