Guest guest Posted January 5, 2002 Report Share Posted January 5, 2002 * Exported from MasterCook * Ratatouille Tofu Lasagne Recipe By :Gradual Vegetarian by Lisa Tracy Serving Size : 4 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 Whole-wheat lasagne noodles -- cooked (or 10 noodles) 2 cups leftover ratatouille 1 1/2 cups ricotta 1 1/2 cups tofu 1 cup grated hard cheese 2 eggs 1/2 cup yogurt Line the bottom of a greased 9-by-9 baking pan with lasagne noodles. Cover with the ratatouille. Mash together the ricotta and tofu. Spread one half of the mixture over the ratatouille and sprinkle on half of the hard cheese. Add a second layer of noodles. Top with the remaining tofu and ricotta. Beat the eggs and yogurt together and pour over the last layer. Top with remaining hard cheese and bake 20 to 30 minutes in a 350F oven till nicely browned.
