Guest guest Posted January 4, 2002 Report Share Posted January 4, 2002 * Exported from MasterCook * Wheat Tortilla Pizzas Recipe By : Vegetarian Celebrations by Nava Atlas, page 205 Serving Size : 10 Preparation Time :0:00 Categories : Beans And Legumes Main Dishes, Vegetarian Pizza Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- ***TOPPING*** 1 tablespoon olive oil 2 cups finely chopped ripe tomatoes 2 scallions -- minced 4 cups canned or cooked pinto beans -- coarsely mashed 1/2 cup beer 1 jalapeño pepper -- seeded and minced OR 4-ounce can mild green chiles -- drained and chopped 1/4 cup fresh cilantro (substitute fresh parsley only if cilantro is unavailable) 1/2 teaspoon ground cumin salt -- to taste ***REMAINING INGREDIENTS*** 6 burrito-sized flour tortillas -- (10-Inch) 1 1/2 cups reduced-fat cheddar cheese OR cheddar-style soy thinly sliced scallions -- for garnish 10 to 12 servings Pinto beans cooked in beer make a terrific topping for these easy tortilla pizzas. Use fresh cilantro if you can; it adds an unusual and distinctive flavor. Preheat the oven to 350 degrees. Heat the oil in a large skillet. Add the tomatoes and saute for 2 minutes, until they soften. Add the remaining topping ingredients and stir together. Bring to a simmer, then lower the heat and cook, covered, for 25 to 30 minutes. The mixture should be moist but not soupy If there is excess liquid, cook, uncovered, until thickened. Remove from the heat and cover tightly. Arrange 3 of the tortillas on 1 or 2 nonstick baking sheets. Sprinkle evenly with the cheese, then top each with the remaining tortillas so that the cheese is sandwiched between. Bake for 10 minutes, or until the cheese is melted. Remove from the oven and place each tortilla sandwich on a flat plate. Distribute the topping over them and garnish each with a sprinkling of scallion. Cut each " pizza " into X wedges with a sharp knife. Serve warm.
