A friend who grew up in San Antonio taught me to make it with roasted peppers and tomatoes, which give it an extra-special flavor. Roast the tomatoes and green pepper under a broiler. Turn on all sides until the skins are quite blistered. Place in a paper bag, shut it, and let steam for 30 minutes. Remove and slip off the skins. Discard the seeds from the tomatoes and the seeds and fibers from the pepper. Chop both fine. Cool to room temperature. Just before serving, peel the avocados and mash them in a mixing bowl. Stir in the lemon juice immediately to prevent discoloration. Stir in the tomatoes and pepper and the remaining ingredients. Transfer to a shallow serving bowl to serve.
