Guest guest Posted January 4, 2002 Report Share Posted January 4, 2002 (This was posted some time ago.) * Exported from MasterCook * Tomato Salsa Recipe By : Vegetarian Celebrations by Nava Atlas, page 201 Serving Size : 1 Preparation Time :0:00 Categories : Sauces And Marinades Vegetables Vegetarian Celebrations Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 cups diced ripe tomatoes 1 scallion -- chopped, up to 2 4 ounces canned mild green chiles -- drained 1 chopped jalapeno pepper -- up to 2, to taste 2 tablespoons chopped fresh cilantro or parsley 1/2 large lemon -- juice of or more to taste 1 teaspoon ground cumin 1/2 teaspoon salt Makes about 3 cups. Combine the ingredients in the container of a food processor. Pulse on and off until the mixture is a coarse puree. Store in an airtight container, refrigerated, until needed. Transfer to a shallow serving bowl to serve.
