Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

8 ounces fresh bean sprouts

1 small red bell pepper -- cored

2 tablespoons oil

2 teaspoons salt

2 1/2 cups water

1 spring onion

2. Thinly sliced the red pepper into strips no more than 1.5-inches long. Trim

and julienne the spring onion to the same length.

3. Heat a wok or large pot, add the oil and wait for it to smoke. Add the bean

sprouts, red pepper and some of the onion. Stir a few times. Add the salt and

water.

4. When the soup starts to boil, garnish with reserved spring onion. Serve hot

as appetizer. May serve 2 as main dish.

VARIATION: Finely dice the green onion and use all as garnish.
