Guest guest Posted January 3, 2002 Report Share Posted January 3, 2002 * Exported from MasterCook * Bean Sprout Soup Recipe By :Chinese Vegetarian Cooking by Deh-Ta Hsiung Serving Size : 5 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces fresh bean sprouts 1 small red bell pepper -- cored 2 tablespoons oil 2 teaspoons salt 2 1/2 cups water 1 spring onion 1. Wash the bean sprouts in cold water, discarding the husks and other bits and pieces that float to the surface. It is not necessary to top and tail (trim) each sprout. 2. Thinly sliced the red pepper into strips no more than 1.5-inches long. Trim and julienne the spring onion to the same length. 3. Heat a wok or large pot, add the oil and wait for it to smoke. Add the bean sprouts, red pepper and some of the onion. Stir a few times. Add the salt and water. 4. When the soup starts to boil, garnish with reserved spring onion. Serve hot as appetizer. May serve 2 as main dish. VARIATION: Finely dice the green onion and use all as garnish.
