Winter Dill Bread

MAKES THREE-LOAVES:

1 cup whole-wheat flour

1/4 cup sugar

2 teaspoons onion flakes -- (instant minced)

1 1/2 tablespoons whole dill seed

2 teaspoons baking soda

2 packages dry yeast

2 cups lowfat cottage cheese -- (1%)

1/2 cup water

2 tablespoons reduced-calorie margarine

2 egg whites

4 cups all-purpose flour

 

In a large bowl, combine whole-wheat flour, sugar, onion, dill seed, salt,

baking soda and yeast.

 

In a small saucepan, heat cottage cheese, water and margarine. When very warm,

add to dry ingredients. Add egg whites and beat at low speed until dry

ingredients are moist. Then beat at medium speed for 3 minutes.

 

Add enough flour to make a stiff dough. Turn out on a floured surface and knead

about 8 times. Place in a warm bowl sprayed with vegetable cooking spray. Cover

and let rise in warm place until double (about 1 hour).

 

Work dough down with spoon and then form into three loaves. Place in bread pans

(4 1/2 by 8 1/2 inches each), sprayed with vegetable cooking spray. Cover and

let rise until double (30 to 45 minutes).

 

Preheat oven to 350F. Bake loaves for about 40 minutes or until brown. Remove

from pans and let cool on racks, top side up.

NOTES : It takes very few steps to achieve this delicious yeast-raised herb

bread. The dill seed complements the soothing flavors in the stew. The baking

soda balances the sour lowfat cottage cheese.
