Garden Vegetable Soup

Amount Measure Ingredient -- Preparation Method

1/2 cup chopped onion

1/2 cup chopped celery

2 tablespoons oil

4 cups chopped tomatoes

1 1/2 cups broken green beans

1 carrot -- thinly sliced

1 tablespoon chopped fresh basil

1 teaspoon honey

1 bay leaf

2 medium zucchini -- sliced

1 cup sliced okra (optional)

1 cup corn cut off the cob

salt and pepper

 

Saute onion and celery in the oil. Add 4 cups water, tomatoes, beans, carrot,

basil, honey and bay leaf. Bring to boil, reduce heat, cover and simmer 30

minutes. Add squash, okra (if using) and corn. Bring to boil and simmer covered

5 minutes or until tender. Season with salt and pepper.

 

VARIATIONS: Add cooked legumes such as flageolets, pea beans or lentils.
