Recipe By : Healthful Cooking by Mary Carroll, Star Tribune 12/01

Serving Size : 32 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

4 cups whole raw pecans

2 tablespoons maple syrup

1 tablespoon apple juice

1/2 teaspoon ground cumin

1/4 teaspoon ground coriander

1/2 teaspoon salt

1 dash cayenne pepper

Makes 4 cups.

With the sweet, you need something salty. I like these crisp pecans, which

are coated with spices and are delicious served warm. Simply reheat on an

ungreased baking sheet for 20 minutes at 200 degrees or until warm.

Preheat oven to 300 degrees. Place nuts in large bowl. In small bowl,

combine maple syrup, apple juice, cumin, coriander, salt and cayenne. Pour

over nuts and toss well.

Place on ungreased baking sheet. Bake for 30 minutes, stirring every 10

minutes, or until lightly browned.
