Quick Cheddar Summer Squash Casserole

1 small zucchini -- sliced

1 yellow crookneck squash -- sliced

1 1/2 cups stale bread cubes -- lightly toasted

1/2 cup grated Cheddar cheese

1 egg

1 cup milk -- may double

parmesan cheese

bread crumbs

butter

 

Toss the squash slices, cubes of bread and Cheddar cheese together in a large,

lightly greased baking dish.

 

Beat the egg and milk together; there should be enough liquid to nearly cover

the squash (add milk if needed). Pour over the squash. Sprinkle a mixture of

parmesan and bread crumbs on top and dot with butter.

 

Bake 30 minutes at 350F.
