Guest guest Posted December 31, 2001 Report Share Posted December 31, 2001 * Exported from MasterCook * Basic Vinaigrette and Salad Dressings Recipe By :Gradual Vegetarian (1985) Lisa Tracy Serving Size : 0 Preparation Time :0:00 Categories : Condiments Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 clove garlic -- mashed 1/3 cup olive oil 1/3 cup vinegar (wine or cider) dash honey 1/4 teaspoon dry mustard salt and black pepper basil or parsley (optional) BASIC: Combine ingredients. Taste for balance of oil to vinegar and correct proportion if necessary. May be made in larger quantities and saved. ALTERNATE vinegar and lemon juice. Vary the oil: light sesame, olive oil, nut oil. Mix oils and acids to vary flavors. YOGURT DRESSING: To the basic vinaigrette, add 1 or 2 tbs plain yogurt. YOGURT-SESAME DRESSING: To the basic vinaigrette, add 2 tbs yogurt, 1/2 tsp herb or herbs of choice (dill, basil, thyme, marjoram); add 1 tbs lightly toasted sesame seeds. FRENCH DRESSING: To Yogurt dressing (above) add 1/2 tsp dry mustard and 1 tsp paprika. Shake or mix well before serving. MUSTARD DRESSING: To Yogurt dressing (above), add 1 tbs dry mustard and 1 tsp extra honey. This one is especially good on a salad containing bitter greens. CUCUMBER DRESSING: To the basic vinaigrette, add 2 tbs yogurt and 1 cucumber, peeled and seeded. Add a fresh mint leaf or two if available. Puree in a blender or force through a sieve.
