Guest guest Posted December 31, 2001 Report Share Posted December 31, 2001 * Exported from MasterCook * Barley Mushroom Soup Recipe By :Gradual Vegetarian (1985) Lisa Tracy Serving Size : 8 Preparation Time :0:00 Categories : Soups Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups barley salt 1 medium onion -- chopped 1 carrot -- thinly sliced 1/2 pound sliced mushrooms -- or more 1 tablespoon oil tamari soy sauce scallion (optional) Rinse barley and bring to a boil in 2 quarts water. Add a dash of salt. Reduce heat and simmer 40 minutes. Meanwhile, saute onion, carrot and mushrooms in oil. Add to barley after 40 minutes and simmer another 15 minutes, or until barley is tender. Season to taste with tamari and cook 5 minutes more. Garnish with chopped scallions, if desired.
