Barley Mushroom Soup

2 cups barley

salt

1 medium onion -- chopped

1 carrot -- thinly sliced

1/2 pound sliced mushrooms -- or more

1 tablespoon oil

tamari soy sauce

scallion (optional)

 

Rinse barley and bring to a boil in 2 quarts water. Add a dash of salt. Reduce

heat and simmer 40 minutes. Meanwhile, saute onion, carrot and mushrooms in oil.

Add to barley after 40 minutes and simmer another 15 minutes, or until barley is

tender. Season to taste with tamari and cook 5 minutes more. Garnish with

chopped scallions, if desired.
