Guest guest Posted December 31, 2001 Report Share Posted December 31, 2001 * Exported from MasterCook * Split Pea Soup Vegetarian Recipe By :Gradual Vegetarian (1985) Lisa Tracy Serving Size : 8 Preparation Time :0:00 Categories : Soups Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon butter 2 medium onions -- chopped 3 peppercorns 2 carrots -- sliced 1 celery rib -- chopped 1 medium potato; scrubbed -- thinly sliced 1 quart water -- more as needed 2 cups split peas -- rinsed and drained 1 teaspoon salt or tamari sauce -- plus more to finish OPTIONAL GARNISH: grated cheese chopped peanuts yogurt Melt butter in large kettle. Add onion, peppercorns, carrots, celery and potato. Cook until onions are translucent and add water. Bring to a boil and add peas and salt. Bring to a second boil, reduce heat, and simmer 30 to 40 minutes, until peas are soft and separating from their skins. Add water during cooking if soup appears to be getting too thick or boiling away. When peas are soft, puree some, but not all of the soup. Adjust seasoning and thickness. Serve with your choice of garnish.
