Raspberry Vinaigrette

1/2 cup olive oil

1/3 cup raspberry vinegar

1 teaspoon honey

1/4 teaspoon salt

1/8 teaspoon ground black pepper

 

Makes 3/4 cup.

 

Simplest for starters is this vinaigrette, which has about half the fat of

store-bought dressings. It tastes wonderful over chopped fresh fruit or

bitter greens such as endive.

 

In medium bowl, whisk together oil, vinegar, honey, salt and pepper.
