Orange Vinaigrette

Amount Measure Ingredient -- Preparation Method

1 cup orange juice

1/4 cup apple cider vinegar

1/4 cup olive oil

2 tablespoons toasted -- (dark) sesame oil

1 tablespoon low-sodium soy sauce

1 teaspoon sugar

2 garlic cloves

1 teaspoon Dijon mustard

 

Makes 1 1/2 cups.

 

This orange and sesame dressing is delicious over pasta salad.

 

In blender, combine orange juice, vinegar, olive oil, sesame oil, soy

sauce, sugar, garlic and mustard. Blend on high until garlic is very

finely chopped.

 

Nutrition information per 2-tbsp. serving: Calories 74, Carbohydrates 3 g,

Protein 0 g, Fat 7 g, including sat. fat 1 g, Cholesterol 0 mg, Sodium 56

mg, Calcium 4 mg, Dietary fiber 0 g. Diabetic exchanges per serving: 1 1/2
