Fresh Herb Vinaigrette

Amount Measure Ingredient -- Preparation Method

1/2 cup olive oil

1/4 cup lemon juice

2 tablespoons honey or sugar

1/2 teaspoon Dijon mustard

1/2 teaspoon minced fresh garlic

1/2 teaspoon minced fresh chives

1/2 teaspoon minced fresh parsley

1/4 teaspoon salt

Freshly ground black pepper

 

Makes about 3/4 cup.

 

Herbs allowed to steep in vinaigrette will develop a deep flavor.

 

In medium bowl, combine oil, lemon juice, honey, mustard, garlic, chives,

parsley, salt and pepper to taste.

 

Nutrition information per 2-tbsp. serving: Calories 184, Carbohydrates 7 g,

Protein 0 g, Fat 18 g, including sat. fat 2 g, Cholesterol 0 mg, Sodium

105 mg, Calcium 3 mg, Dietary fiber 0 g. Diabetic exchanges per serving:
