I have a special request: I just received a crockpot for Christmas and am searching for vegetarian recipes for it. I seem to remember someone offering a vegetarian crockbook cookbook for download, but I cannot find anything about it now. (was it Karen C. Greenlee?) I would like it now if anyone has it and would like to share. Thanks and here's a recipe: * Exported from MasterCook * Fried Ravioli with Walnut Pesto Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Appetizers World Wide Recipes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 oz cheese-filled ravioli -- (335 g) cooked according to package directions and thoroughly drained 2 Tbs olive oil or butter -- (30 ml) 1 cup packed fresh basil leaves -- (250 ml) 1 cup packed flat-leaf parsley -- (250 ml) 3/4 cup extra-virgin olive oil -- (180 ml) 1/2 cup chopped walnuts -- (125 ml) 1/3 cup grated Parmesan cheese -- (80 ml) 1 cloves garlic -- chopped (1 to 3) Salt and freshly ground pepper to taste Fry the ravioli in the oil in a skillet over moderate heat until they are light golden brown on both sides. Drain on paper towels. Meanwhile, combine the remaining ingredients in an electric blender or food processor and process until thoroughly blended. Spoon the sauce over the ravioli or serve it on the side. Serves 6 to 8 as an appetizer, 4 to 6 as a first course. Almost any recipe requiring baking or simmering will work beautifully. Here are a few simple guidelines that will help you prepare your favorites in the crock-Pot: Allow sufficient time on " Low " setting. Remember--liquids don't boil away as in conventional cooking. Usually you'll have more liquid at the end of cooking instead of less. Try reducing the amount of liquid in the recipe by about one-half. The exception would be soup recipes or recipes with long grain converted rice which will need the same amount of liquid or 1/4 cup liquid per 1/4 cup raw rice. Many preparatory steps are not necessary. Vegetables do not need to be browned or sauteed. In most cases, all ingredients can be added to the Crock-Pot in the beginning and allowed to cook all day. The Crock-Pot cooks so gently that a few extra hours on Low need not worry you. Any recipe may be cooked on High for the first two hours to reduce cooking time, then turn to Low. If recipe says Cook in Crock-Pot: 15 to 30 minutes 1-1/2 to 2-1/2 hours on HIgh or 4 to 8 hours on Low* 30 to 40 minutes 3 to 4 hours on High or 6 to 10 hours on Low* 50 min to 3 hours 4 to 6 hours on High or 8 to 18 hours on Low* *Most uncooked m**t and vegetable combinations will require at least 8 hours on Low. - - - - - - - - - - - - - - - - - - Hello friends, I was a member a this list a couple of years ago and I am back.
