Meatless Minestrone

1 cup dried split peas

1 large onion -- chopped

2 small potatoes

1 pound canned tomatoes

1/2 teaspoon oregano

1/4 teaspoon basil

1 bay leaf

2 pinches thyme

2 peppercorns -- more to taste

1 dried clove

2 carrots -- chopped

1/4 cabbage head -- sliced

1/2 pound spinach or escarole -- chopped

1 cup cooked kidney beans OR chickpeas

1 cup cooked macaroni

salt

yogurt or grated cheese

 

Rinse the split peas. Put in a kettle with 2 quarts water and bring to a boil.

Boil for 30 minutes and add onion, potatoes, undrained tomatoes and the herbs

and spices but not the salt. Cook until potatoes are soft and peas begin to

disintegrate. Add carrots and cook until tender. Add cabbage and spinach. cook

for a few minutes, add beans and macaroni, and cook for 10 to 15 minutes, adding

more liquid if needed. Season with salt to taste. Garnish with a teaspoon of

yogurt in each bowl or with grated cheese, if desired.

 

IMPROVES the second or third days; more liquid may be needed on reheating. Other

vegetables may be added: chopped celery, cooked corn, sliced squash, chopped

green peppers.

NOTES : It's really the beans, the greens, the tomatoes and the pasta that give

minestrone its taste and texture, and not the meat. You'll never miss it. Good

for crisp fall evenings with real Italian bread or pumpernickel and red table

wine.
